Είναι οι μέρες του χρόνου που ερχόμαστε πιο κοντά με την οικογένεια και φίλους, καθόμαστε γύρω από το τραπέζι, τσουγκρίζουμε τα ποτήρια μας και ευχόμαστε υγεία! Είναι οι μέρες του χρόνου που συνεχώς βρισκόμαστε καλεσμένοι σε κάποιο συγγενικό ή φιλικό σπίτι και τρώμε τόσο πολύ!
Είναι οι μέρες του χρόνου που επιβάλλεται να ξεχάσουμε για λίγο την αυστηρή διατροφή και να απολαύσουμε το γιορτινό σπιτικό καλομαγειρεμένο φαγητό, τα παραδοσιακά γλυκά, ναι η ζάχαρη επιτρέπεται αυτή την εποχή του χρόνου, όπως το αλκοόλ, και συνεχώς αναρωτιέμαι πόσο μπορεί να φάει ένας άνθρωπος! Το αγαπημένο μου σημείο είναι η πιατέλα με τα τυριά που συνοδεύουν το κόκκινο κρασί μου και που πάλι με κάνει να αναρωριέμαι, πόσο τυρί μπορεί να φάει ένας άνθρωπος σε μια μέρα! Πολύ, πίστεψέ με!
Σου έχω μια συνταγή για όλο το χρόνο αν σου αρέσουν οι πίτες και μπορεί να γίνει με οποιοδήποτε κρέας σε πολλές παραλλαγές. Μου αρέσει πολύ με μπούτι κοτόπουλο φιλέτο ψημένο για 35′ μόνο με ελαιόλαδο, αλάτι και πιπέρι στους 220º. Αυτές τις μέρες όμως μπορείς να εκμεταλλευτείς ό,τι κρέας περισσέψει από το γιορτινό σου τραπέζι και να φτιάξεις πανεύκολες στριφτές ατομικές πίτες με χωριάτικο φύλλο, μανιτάρια και λίγη γραβιέρα. Εγώ ετοίμασα τις πίτες αυτές με γαλοπούλα. Αν πάλι θέλεις μια εκδοχή χωρίς κρέας, απλώς παράλειψέ το!
Δες ακόμα: Πίτα στριφτή με κολοκύθα και φέτα
Θα χρειαστείς (5 ατομικές στριφτόπιτες):
- 5 φύλλα χωριάτικα
- 2 χούφτες γαλοπούλα ή άλλο κρέας ψαχνό κομματάκια
- 500 γρ μανιτάρια σε φέτες
- 1 μεγάλο κρεμμύδι ψιλοκομμένο
- 1 μεγάλο καρότο τριμμένο
- 1 χούφτα γραβιέρα τριμμένη
- ελαιόλαδο
- 1 κγ μοσχοκάρυδο
- αλάτι πιπέρι
- 1 αυγό για επάλλειψη
Εκτέλεση:
- Προθέρμανε το φούρνο στους 200º.
- Σε ένα τηγάνι ρίξε λίγο ελαιόλαδο να κάψει και τσιγάρισε το ψιλοκομμένο κρεμμύδι.
- Πρόσθεσε τα μανιτάρια, αλάτι και πιπέρι και τσιγάρισε μέχρι να μαλακώσουν.
- Έπειτα πρόσθεσε την ψιλοκομμένη ψίχα γαλοπούλας, το τριμμένο καρότο, το μοσχοκάρυδο και τη γραβιέρα κι ανακάτεψε για 1-2′. Απέσυρε το τηγάνι από τη φωτιά.
- Άπλωσε σε καθαρή επιφάνεια τα χωριάτικα φύλλα, λάδωσε το πρώτο με λίγο ελαιόλαδο και με ένα κουτάλι άπλωσε λίγο από τη γέμιση κατά μήκος της πιο μεγάλης πλευράς. Τύλιξε το απαλά και μετά στρίψε το σχηματίζοντας ένα σαλίγκαρο. Συνέχισε το ίδιο με τα υπόλοιπα φύλλα σχηματίζοντας τις ατομικές στριφτόπιτες.
- Λάδωσε ελαφρά ένα ταψί και αράδιασε τις στροφτόπιτες. Χτύπα ελαφρά ένα αυγό και άλειψε τις πίτες για να πάρουν ένα ωραίο χρυσό χρώμα όταν ψηθούν.
- Ψήσε για 45′ περίπου ή μέχρι να πάρουν ωραίο χρώμα.

I think it’s those days of the year that we are getting closer to our family & friends, sitting around the festive table, raising our glasses in a toast to health and joy. It’s this time of the year that we are invited to a friend’s or a relative’s home for lunch or dinner and we let aside our strict diets to enjoy homemade food and traditional sweets. I always wonder, how much can a human eat in a day!!
My favorite part is the cheese platter with red wine most dinners start with. And again, how much cheese can a human eat in a day? A lot, trust me! It’s the time of the year that I give myself a break, I put no rules to my diet, I allow myself to eat some sugar, to have some more alcohol & to try every single dish & treat guilt-free!
Here I have a great recipe, crunchy mini pies you know I love so much, filled with mushrooms, veggies, cheese and any meat leftovers you got from your dinner. You can make these pies in many variations. I also like them with a chicken filling, I use to roast some chicken thigh fillets with extra virgin olive oil, salt & pepper for about 35′ at 220º. These days you can use any lefties of either chicken, turkey or pork and turn them into delicious pies. I made these pies with turkey. You can even have them meatless, still delicious, just increase the quantity of the veggies!

Ingredients (makes 5 mini pies):
- 5 filo pastry sheets
- 2 handfuls turkey or any other meat leftovers, crumbled
- 500 gr portobello mushrooms, sliced
- 1 big onion, finely chopped
- 1 big carrot, grated
- 1 handful grated Gruyere cheese
- extra virgin olive oil
- 1 tsp nutmeg, ground
- salt, pepper
- 1 egg for egg wash
Method:
- Preheat the oven at 200º.
- Heat some extra virgin olive oil to a pan and saute the chopped onion.
- Add the chopped mushrooms, salt and pepper and saute them until cooked.
- Add the turkey crumble (or any other meat you use), the grated carrot, the ground nutmeg, the grated Gruyere cheese and stir well for 1-2′. Remove the pan from the heat.
- Grease a baking tray with some olive oil. Spread the filo sheets on a clean working surface. Grease one sheet at a time and add some of the mixture close to the longest edge, roll the filo and them form a ‘snail’ and place it into the baking tray. Continue with the same process placing the second mini pie snail next to the first one.
- Sprinkle with some olive oil. Whisk softly an egg and brush the pies surface.
- Bake for about 45′ at 200º or until golden and cooked.
